    About Carola Wine + Cider: David Hendrickson makes a range of delicious natural cider in a small barn on the banks of the Nehalem River on Oregon's North Coast. The apples and fruit used for his fermentations are more 'found' than 'farmed,' sourced from numerous forgotten trees, large and small, old and young, on both sides of the Oregon Coast Range. David cares for and harvests from several apple trees throughout his community - including trees still thriving from century old orchards on farms in the area. Each of his cider are natural naturally fermented (wild yeast), rolling throughout the harvest season without any additions or adjustments in the cellar (zero / zero, nothing added and nothing removed during the cider making). His ciders are bottle conditioned by adding a bit of fresh juice at bottling for a natural sparkle, and to best preserve the spirit of diverse and wild fruit and the unique place where it grows. We find that each of his ciders has a soft salinity, unique to the coastal terroir, and that makes for delightful food pairings with seafood and fresh seasonal fare. More about Carola Wine & Cider
