Eve's Cidery (Van Etten, Finger Lakes, New York)
Eve's Cidery is a small family farm producing naturally fermented ciders from organically-grown fruit and from wild-foraged apples and pears in the hills of Van Etten, located at the intersection of the Southern Finger Lakes and the Northern Appalachian Plateau in upstate New York.
Founded byΒ Autumn Stoscheck and James Cummins in 2001, Eve's Cidery has evolvedΒ into a cidery that grows apples for cider-making only, selecting specific varieties and intentionally growing them for cider quality: organically grown apples that bring concentrated flavors, structure and acidity to their ciders.Β For Eve's,Β terroirΒ goes beyond the commonly accepted influences that affect a cropβs characteristics, and takes into consideration the influenceΒ that the life stories of the humans involved have on the qualities of the cider. For Eve's Cidery, a bottle of cider is a way to communicate: a place, a time, a deeper meaning. Itβs an expression too, of the people who make it Β β who tend the trees and look after the yeasts.
