Liberty Cider's Kingston Black is a single-variety cider made from 100% Kingston Black apples. It's a dry cider with medium-plus tannins and acidity. A fairly complex bevy of flavor notes including lemon peel, vanilla, clove, butterscotch, fruit leather, orange marmalade, blossoms, and a bit of english style phenolics. A nice dry finish with some lime spritz left over on the palate.
Notoriously hard to grow, Kingston Black is nonetheless the world’s most renown cider apple, presenting an ideal balance of flavor, tannins and acidity. Complex and layered – green apple, tangerine and spicy flavors with hints of caramel and earthy funk. Suggested Pairings: Sharp cheddar, figs and prosciutto, seared duck, pork, roast vegetables.

Based in Spokane, Washington, they gather nearly all of their fruit from three tiny, family-run orchards in Eastern Washington that grow apple varieties with cider in mind.
