Finnriver Farm & Cidery's Vista Ridge cider is a blend of bittersweet cider apple varieties grown by Vista Ridge Orcahrds in Quilcene, on Washington State's Olympic Peninsula. Apple varieties include Ellis Bitter, Amere de Berthcort, and Reine des Pommes.
This off-dry cider offers a deep sense of leather and apples, with baking spice and warm fruit and a mouth-filling tannic chewiness that finishes dry. Excellent on it's own, and a great food-pairing cider - recommended pairings include creamy, sweeter cheeses, salami, sausages, and other aged meats. A special treat with a clam linguine, or a perfect compliment to a fresh rolled falafel sandwich.
CIDERMAKER NOTES: This cider is the first of our traveling estate-based bottles that feature cider apples grown at local orchards we love. The apples in this release come from a single orchard in Quilcene, WA called Vista Ridge and this fermentation features their first significant harvest of bittersweets and bittersharps. With indigenous yeast naturally present in the fruit, and a bottle conditioned bubble, this cider is a superb taste of place and of the elements of the Olympic Peninsula.
Founded in 2008, Finnriver produces ciders that range from apple-forward orchard blends to innovative fruited and botanical ciders. Fire Barrel is a longtime favorite or ours, and this year's release is no exception. Having been released year after year, we only wish we'd kept previous vintages in our cellar for comparing the nuances that each year's harvest bring to this cider. Made from 100% organic estate grown apples, fermented slow through the winter, Fire Barrel drinks slightly off-dry with notes of fresh apple, barrel in nice balance with wood and vanilla notes, some citrus pith and twiggy bitterness. The finish is full of fresh apple skins and tannins.
