Rose Hill Farm's Poire is a perry (100% pear) made from a blend of cultivated perry pears and wild foraged pears. Wild fermented in stainless and aged for over 1 year in neutral French oak. Bottled Méthode Traditionnelle and conditioned using tannic wild foraged pear juice. Aged two years in bottle. Riddled and disgorged. Raw, unfined and unfiltered.
Slightly hazy straw color in the glass. Zesty nose of key limes and tamarind. Crisp, light and remarkably dry for a perry. Flavor profile of candy pear, smartee or pixee sticks sour candy like quality to it, with lingering notes of fennel and elderflower. Bold acidity, moderate tannins. Serve slightly chilled in a wine glass.
