Pilton Cider's Somerset Keeved is a sparkling, traditional English cider made from a blend of bittersweet apple varieties grown in traditional orchards around the parish of Pilton and harvested in 2015. Made using the method of keeving, resulting in natural residual sweetness without adding any sugar. Fermented using wild yeast.
Fewer and fewer British ciders are imported from the U.K., and it's been some years since new vintages of Pilton's ciders were brought over. But like many traditional ciders, this one is aging well and still tasting delightful. A thoughtful slow sipper. Much of the fruitiness has dropped out of the cider over time. What's left is a glass worth contemplating your way through. Flavor notes of apple skin, mild barnyard, tobacco, apple juice, bitter clove, and a light slap of phenolics.
