Alpenfire Cider's Ember is one of their flagship, annual releases (along with Spark) and is a blend of organically grown Bittersweet apple varieties from the family's own orchard. Each vintage is slightly different from one year to the next based on the orchard's yield of each variety and annual terroir conditions that may impact the fruit - but every single year this release is one we look forward to, and it's always one of our favorite ciders of the year.
This 2024 vintage (year fruit was grown and harvested) was freshly released in December 2025. The blend consists mostly of famed bittersweet cider varieties: Vilberie, Dabinett, and Yarlington Mill. There's also a touch of Golden Russet (less than 5% of the juice blend).
This cider pairs beautifully with so many foods, including roasted turkey or chicken, creamy mashed potatoes, roasted squash, and smoked ham.
About Alpenfire Cider: Alpenfire was one of Washington State's first commercial cideries when they opened in 2006. For two decades since then, they've been very consistently releasing some of the finest craft ciders in North America. Alpenfire was also the first American cidery to obtain a certified organic designation. Their family's estate orchard in Port Townsend on the Olympic Penninsula includes around 1,000 English, French, and Heirloom apple trees. Operated by Bear and Nancy Bishop, and their son Phillipe - to the Bishop family organic is not an option but a necessity - a necessity that keeps them in touch with nature and helps to create the kind of future they want for their family and the planet.
