Empyrical's Outlier Cider is an oak-aged crabapple blend that prominently features a single transcendant crabapple tree growing on a historic old prairie orchard in the foothills of Washington's Cascade Mountains. This lone tree is roughly 30 feet tall and sits on the edge of a property in Central Washington surrounded by little else. The Transcendant Crabapples from this tree are blended with Hewes Crab, Muscadette de Dieppe, Calville Blanc and Dolgo crab apples grown on Empyrical's own orchard; as well as some Ashmead's Kernel apples harvested in Eastern Washington.
The sharp blend was mellowed by an in-bottle malo-lactic fermentation. The cider drinks dry to semi-dry, with medium-plus tannins and acidity in great balance. Complex aromas of a freshly cooked down batch of apple butter - cooked apple, bit of baking spice, and faint notes of white flower, apricot, wood, and an orange wedge. Rich fruitcake flavor profile, a palate cleansing minearity, and with lingering phenolic notes of smoke, spice, and barrel.

About Empyrical Cider: We simply cannot say enough good things about Empyrical Cider. Since their launch in 2022, every cider & perry they've released has been one of our favorite bottles in the shop. (Side note: we've also had the pleasure of trying countless bottles of experimental batches and bottles from their archives, all of which have been highly impressive). Empyrical Cider was started by Adam Wargacki and Elizabeth Lockhart - partners in business and in life. They planted their own pome fruit orchard on their family's property in Snohomish, Washington. Notably, more than 400 of their 1500+ fruit trees are traditional perry pear varieties. They craft their cider and perry blends with an immense amount of thought and careful attention to detail - and the results are always stunning. Each of their releases is a very limited, small batch offering, and not to be missed. Easily the best perry maker in the United States, and their ciders are every bit as good.
