The Dolgo crabapple hails from Eastern Europe and its name means 'long' because the apple's elongated egg shape. Dolgo crabapple trees were planted throughout the Denver area years ago for ornamental purposes, and Haykin is making use of these trees to make a beautiful cider featuring 100% Colorado grown apples. This cider is made from 50% Dolgo crabapples foraged in Denver, Aurora, Adams, and Arapahoe counties and 50% Colorado-grown Gala apples.
Dolgo showcases the aromas and flavors of raspberries, alpine strawberries, and rose water, with a soft tannic structure. There is an earthy, farmy backdrop from a carbonic maceration fermentation.
Bottled in 2022 with fruit foraged in the 2021 harvest season.
