Fuente Guijarro - Metodo Casico Cider is a rarity - Sidra del Sur (Cider from the South). In Asturias and Basque Country in Northern Spain there are rich traditions and cultures of cider drinking, but not so much in Southern Spain. To our knowledge, Manuel Moreno and Sara Bertani are one of the only producers in Southern Spain making cider from their own apples.
Located in the Natural Park of Sierra Nevada and founded in 1998, Manuel and Sara recovered an old orchard preserving ancient varieties while planting around 500 more trees with wild foraged varieties, mostly prunus malus. The farming is done organically and harvest is done by horse & mule as the slopes and terrain make it impossible to access with any other type of vehicle. The cider is
Metodo Casico is made without additives of any kind and is 100% natural cider - fermented by the native yeast from the fruit, bottled unfined, unfiltered, and without sulfites. A secondary fermentation in the bottle results in a cider that is sparkling, unlike most of the Spanish cider that is imported to the U.S.
