Keepsake Cidery's Aura is a champagne style cider made 100% from Golden Russet apples. This 2023 vintage (year fruit was harvested) was aged for roughly 2 years on the lees in bottle, then disgorged and corked.
The cider is high acid, high tannin and high bubble. Perfect for celebrating life’s small and big moments.
Aromatics reminiscent of active fermentations inside a cider barn during the late fall and early winter - on the nose you get strawberry, white flower, lime zest, and light yeasty pastry dough. The cider drinks dry with a lush sparkle and medium tannins, high acidity. Mouthfeel and body has a pleasant subtle creaminess to it from time on the lees. Sweet tart candy, ruby red grapefruit, canned pineapple, lime juice, subtle nuttiness. Long lingering acidity and notes of honeysuckle, green apple skin, subtle twig, lime peel on a dry finish.
As with all of Keepsake's ciders, this is made without anything added or anything removed - the only ingredient is the apples.

About Keepsake Cidery: From the Cannon Valley in Minnesota, Keepsake makes some of the finest ciders in the Midwest. Named after the Keepsake apple, which was developed locally by the University of Minnesota's Horticulture program. Head Cidermaker Nate Watters makes a range of dry-to-sweet ciders with fantastic character and flavor profiles - clearly inspired by great English ciders. Made using cider apple varieties grown on their own orchard and procured from other local farms in the area - most of which are organically grown. All of the ciders are fermented naturally with the native yeast living on the fruit, and without any additives (no added sugar, nutrients, sulfites, etc.).
