Raw Cider's Sparkling Perry is made from a blend of d’Anjou and foraged pears. The anjou pears were sourced from 50+ year old dry farmed trees in White Salmon, Washington on the Columbia River. The wild seedling pears were sourced from secret places deep in the woods of Washington and Oregon.
Produced traditional method, with an in-bottle fermentation producing fine silky bubbles. Hand disgorged with no added sugars, retaining balanced sweetness with unfermentable sugars naturally in pears.
A beautifully done perry - delicate and light with a nice balance of fresh dessert pear, and complex feral pear notes. Rare & limited, this perry was otherwise exclusive to Raw's own club or for enjoying in their tasting room.
Tasting Notes: Off-dry / semi-dry. Plus tannin, medium acidity, great overall balance. Very light sweetness up front cut through by tannins and fresh pear skin notes. Floral, honeysuckle notes accompanied by lime skins and crisp mineral qualities through the mid palate. Finishes light and dry with lingering tannins and pear skins.
