This Méthode Ancestrale Colorado Crabapple Cider is a limited release cider from Haykin Family Cider in Colorado. Many Colorado crabapples are exceptional for cidermaking, and Talia and Dan Haykin and their team forage them across the state. There are more than 20 unknown crabapple varieties blended in this bottle.
Bottled prior to fermentation completing in the Ancestrale Method (a.k.a. Pét-nat or Pet Nat). Once bottled, the cider was allowed to age for 14 months sur lie (meaning on the yeast that remains in the bottle after it's done fermenting) before disgorging (releasing the yeast from the bottle). The final fermentation happening in bottle allows for a lively sparkling cider, and the time spent aging on the yeast adds complexity to the body and flavor of the cider. Together, the blend of crabapples and cider making process evoke enigmatic and magical flavors of clove, fennel, persimmon, black tea, flower petals, and lemon. A lengthy yet light finish on the palate with refreshing notes of tea, lemon, and fresh apple sweetness. A celebration worthy bottle for any occasion, or a great addition to your dinner party!
Bottled in 2021 using fruit foraged during the 2020 harvest.
