Keepsake Cidery's Orchard Reserve Medium cider is a juicy, fruity, slightly sweet, and tart cider made from a blend featuring high acid and aromatic apple varieties like Golden Russet, Grimes Golden, Arkansas Black, Gold Rush, Keepsake, and Chestnut Crabapples; blended with a smaller percentage of bittersweet apple varieties for a soft background of tannins (including Dabinett and Ellis Bitter).
Keepsake makes a cider from a similar blend annually. Some vintages the fermentation goes dry. Other years they keeve the cider, resulting in some residual sweetness, as with this one from the 2023 harvest. This Medium version of the cider is spontaneously fermented with no filtration or added sulfites. Bottled in the Charmat Method.
Tasting Notes: YUM. This cider drinks semi-dry to semi-sweet, with juicy acidity (medium-plus) and light tannins (medium-minus). Fresh apple aromatics that are quite inviting. On the palate this cider has a candy-like quality to it - candy apple and candy lemon - with a good balance of slightly sweet and tart. Really enjoyable, highly recommend for fans of English ciders or those who want a little sweetness and a lot of nuance.
As with all of Keepsake's ciders, this is made without anything added or anything removed - the only ingredient is the apples.
About Keepsake Cidery: From the Cannon Valley in Minnesota, Keepsake makes some of the finest ciders in the Midwest. Named after the Keepsake apple, which was developed locally by the University of Minnesota's Horticulture program. Made using cider apple varieties grown on their own orchard and procured from other local farms in the area - most of which are organically grown. All of the ciders are fermented naturally with the native yeast living on the fruit, and without any additives (no added sugar, nutrients, sulfites, etc.).
