Rose Hill Farm's Farmhouse Pheasant is a wild fermented cider made with a blend of estate grown apples. A rich and aromatic sparkling cider, perfect for every day drinking. Dedicated to the friendly pheasant who visited daily to snack on apple pomace outside Rose Hill's winery production space.
Raw, unfined and unfiltered. Chill well before opening and serve in a pint glass. This cider is dry with just a touch of residual sweetness. Medium-plus to high acidity and low tannins. Fresh apple flesh, lemon juice, and sour candy flavor notes with slight phenolic funk from the yeast.
Apple varieties in this vintage (2022): 27% Ida Red, 20% Golden Russet, 13% Geneva Tremlettes, 13% Newtown Pippin, 7% Esopus Spitzenberg, 7% Chisel Jersey, 7% Granny Smith, 6% Goldrush.
