The Arratzain Inn is located in the Usurbil moutnains above San Sebastian in Spain's Basque Country. The property sits amidst nearly 10 acres of apple orchards growing native Basque apple varieties, and the Inn has been home to cider production for nearly 500 years. The Inn was purchased by the Lizaso family in 2000, and they received certification for their organic practices in 2010. They product natural Sidra (Sagardo Naturala in Basque) in the inn's cellar, using only native Basque apple varieties.
The classic Spanish Cider profile in this Sagardo Naturala comes from the 20-30 various native Basque apple varieties used. The blend is typically 60% acidic apples, 30% bitter apples, and 10% sweet apples. 100% organic estate grown fruit. The cider is spontaneously fermented with native yeast in stainless steel tanks before aging over winter in traditional kupelas (large wooden barrels/foudres).
