Liberty Ciderworks' Brown's Apple is a single-varietal English-style cider made from the Brown's Apple. This classic "sharp" UK apple seems to love the Palouse region, bearing profusely and yielding an unusually balanced profile. Noticeably pink from the apple's flesh, this cider's pleasant bittersweet nose leads strong baked apple, stone fruit, strawberry, and burnt sugar flavors.
Enjoy as a sipper, or pair with sharp Cheddar and Stilton cheese, roast duck, pork or rich casseroles.
This UK varietal is often classified as a “sharp” apple best suited for blending, but grown at Liberty's partner Bishops’ Orchard in Garfield, WA, they express remarkable balance and flavor, and make for an outstanding single-varietal cider. Wild-yeast fermented and aged three months in American oak barrels.
Tasting Notes: Dry (slightly off-dry but tannins dry that right out) with medium-plus tannins and medium-plus to high acidity. Notes of lemon, leathery apple skins, tart, slight vanilla note, mild farmhouse funk.
