Onirique Cider's Recolte Automnale is a blend of mid-season ripening cider, culinary, and crab apple varieties. A lens onto the pomological bounty of early Fall in California's Sonoma County.
Récolte Automnale blends some of the most revered apples planted in abundance in the area, including: Jonathan, Golden Delicious and Rhode Island Greening, with more elusive cider cultivars including Nehou, Porter's Perfection, Amere de Berthcourt, and Kingston Black. Locally foraged crab apples round out the blend.
Fermented completely in stainless steel, with fresh pressed juice used as a Liqueur de tirage to kick start a secondary fermentation en tirage.
This cider is bone-dry and structured, with a lively tension and fleshy concentration. This cider is very food friendly, and can be enjoyed in place of white or sparkling wine in any occasion, particularly those in which rich, creamy, or spicy foods could use a vibrant backstop.
Tasting Notes: Dry but with hints of sweetness from full bodied profile. Medium acidity, medium tannins in great balance. Tannins are mostly a subtle bitterness with only light astringency. Delightful notes of apple skins, citrus zest, red grapefruit, a crisp minerality, and slight salinity. .
About Onirique Cider: Onirique is the French word for “Dreamlike”. This project is the Onirique desire of the Retornaz Family to share their collective energy, expression, and experience. Working at a prominent organic apple farm and cidery in Normandy, Jeremy R etornaz learned of the rich traditions and French cider making practices associated with the Calvados region, and later introduced the Onirique brand into the U.S. market. Seeing the potential for cider, and discovering the pomological potential of California's Sonoma County upon his return stateside, Onirique was created in an attempt to express this place through the lens of cider. What results from this “Projet d’Onirique” are ciders reminiscent of Normandy, with a uniquely Californian soul.
With respect to the apples, Onirique Cider is made to express their qualities; you will find an intense apple characteristic in their ciders. Prolonged maceration on pulp and skins is done to this effect. When applicable, the Normandy cider tradition of Keeving is utilized. This process often results in residual sweetness, a softened tannic structure, and a refined natural carbonation.
Onirique currently releases three ciders each vintage, highlighting the apples that ripen at different stages of the growing season in Sonoma County. Gravenstein is their early-season cider, Automnale is a blend of mid-season apples, and Hivernale features a blend of late-season apples.
