Shawnee Hill Farm - Estate Sparkling Cider (750 mL)
Shawnee Hill Farm - Estate Sparkling Cider (750 mL)
Shawnee Hill Farm's Estate Reserve Cider is a sparkling cider made in the Traditional Method (aka Methode Champeniose, the same labor intensive process used to make champagne).
This 2021 vintage (year fruit was harvested) is a blend of high acid, aromatic cider apples including Golden Russet, Harrison, Wickson Crab, and Ashmead's Kernel. The cider is fermented dry, then a secondary fermentation in bottle. It was then rested and aged on the lees for nearly 4 years before the cider was disgorged (the process of releasing the lees, or spent yeast, out of the bottle form the secondary fermentation) and then dosaged with a dash of pommeau to finish the cider.
About Shawnee Hill Farm: Located on Vashon Island in Washington State, just a short ferry boat ride from Seattle. The small village and remote island of Vashon is home to dozens of organic farms and a robust cider community - there are three commercial cideries and dozens of excellent home cider makers on the island. Stephen and Jenna Buffington bought the property their farm now resides on more than 20 years ago, and have spent two decades building and growing their farm, orchard, and vineyard. They've planted 100s of fruit and nut trees as well as two vineyards on the property, where they now make cider, wine, and spirits. After years of working with another cidery on the island, Stephen launched Shawnee Hill Farm's commercial cidery & winery in 2022. We first bumped into Stephen pouring his pommeau at the Farmer's Market on the island - it was one of the finest American made pommeaus we'd ever tried. We're thrilled to be able to bring his delightful ciders and pommeau off the island and into your glass.
