Madrone Cellars' Salish Trio is a sparkling cider made from a blend of organic San Juan Island grown pears, apples, and quince. The blend includes 45% Shinko Asian pears, 25% King apples, 23% Blue Pearmain apples, 4% quince, and 3% crabapples. Stainless steel fermentation. Bottle conditioned. This cider is dry with medium-to-plus acidity and a light tannin profile. The flavor notes are quince forward, with a bouquet of supporting flavors including floral notes, lemon zest, fresh apple skin, pear, soft notes of pastry dough, and lingering minerality & spice notes.
Try this cider side-by-side with Madrone's The Isle - a piquette style ciderkin made by rehydrating the pomace (leftover fruit pulp) from the Salish Trio. The rehydrated fruit is then pressed for a second "juice" blend that is fermented into a light, refreshing ciderkin.
Madrone Cider is based on San Juan Island in Washington State. They work with local farms to procure their hard cider apples and local ingredients. Only fresh, natural fruits and ingredients are used during production, to preserve the purity of flavor.
