Brooklyn Cider House's Fabler cider is a citrusy, bright and complex cider that is aged on lees for 6 months and then in neutral oak barrels for another 6 months. Apples varieties in this blend include Dabinett, Rhode Island Greening, Binet Rouge and Bedan des Parts.
Tasting Notes: Greets you with citrus peel, green apple and creamsicle aromas and leads into a crisp and acid-driven pallet rounded off with a rich mouthfeel from careful aging on lees and oak. Pairs excellently with roasted pork loin.

About Brooklyn Cider House and Twin Star Orchards: Started by Peter and Susan Yi, siblings whose vision for Brooklyn Cider House was first born after a visit to Spanish cider houses on a trip to Spain's Basque Country. They first opened their cider house in 2014 in New York City's Brooklyn borough. Their cidery is inspired by their Korean heritage, new and old world winemaking techniques, and the life changing experience pairing natural cider with excellent food while vacationing in Spain. Peter's son Richard Yi is now their head Cidermaker, joining the business in 2024 after first learning to make wine in California's Napa Valley. We have been incredibly impressed with the evolution of Brooklyn Cider House's ciders, especially Richard's craft (we love listening to Richard talk about his ciders - check out his interview on the Ciderchat podcast).
