Mount Diablo's Native Son is a pét nat cider made 100% from biodynamic Wickson Crab apples grown in California's Anderson Valley. Hand harvested, crushed, pressed and wild fermented in French neutral oak barrels from naturally present native yeasts. True to Petillant Natural, the base cider is unfined, unfiltered and bottled before primary fermentation is allowed to finish, resulting in a unique petillant cider.
This single-varietal cider is dry with medium plus acidity and medium tanins. Moderately complex with notes of apple skin, lemon peel, grapefruit (red/sweet), peppercorn, honey comb, slight oak, and with a smartee like candy sweetness at end. Lemon juice linger on the finish. Bitter notes of apple twig and crabapple.
