Onirique Cider's Gravenstein is a single-varietal cider celebrating Sebastopol California’s historic apple. Crafted to be a pure expression of the Gravenstein apple and the freshness for which they are known for. Fruit forward and succulent, this cider is stunning.
Apples picked in the last days of August, fermented naturally (wild yeast), then keeved in the traditional Norman “chapeau brun” style. Slowly fermented over four months in stainless steel barrels then bottled as a Pet Nat. No added sulfites, zero/zero natural cider.
Gravensteins are the first apples to ripen in Sonoma county, and since the settling of the Russian River Valley the summer’s crop of Gravs has been a moment to be delighted in. Celebrated for their delicate perfume and crisp acidity, thousands of acres of these apples once covered the landscape of Sebastopol and the surrounding hills. Roughly 600 acres remain, and Onirique is doing their part to “Save the Gravensteins” by producing a singular cider from a blend of West County orchards: Marshall Ranch off Bodega highway, Vulture Hill in Occidental, and their own stewarded orchard on Pleasant Hill.
Tasting Notes: Subtle aromatics - lightly floral, fresh apples, meadow foam honey, melon, honeysuckle, and peach. Semi-dry to semi-sweet with medium acidity and low tannins. Flavor profile is lead by notes of fresh, tart apples. A gorgeous showcase of Sonoma County’s beloved Gravenstein apples. Juicy apple qualities, sweet floral notes, with hints of honeydew melon and light honey. Lingering sweetness with a crisp finish.
About Onirique Cider: Onirique is the French word for “Dreamlike”. This project is the Onirique desire of the Retornaz Family to share their collective energy, expression, and experience. Working at a prominent organic apple farm and cidery in Normandy, Jeremy R etornaz learned of the rich traditions and French cider making practices associated with the Calvados region, and later introduced the Onirique brand into the U.S. market. Seeing the potential for cider, and discovering the pomological potential of California's Sonoma County upon his return stateside, Onirique was created in an attempt to express this place through the lens of cider. What results from this “Projet d’Onirique” are ciders reminiscent of Normandy, with a uniquely Californian soul.
With respect to the apples, Onirique Cider is made to express their qualities; you will find an intense apple characteristic in their ciders. Prolonged maceration on pulp and skins is done to this effect. When applicable, the Normandy cider tradition of Keeving is utilized. This process often results in residual sweetness, a softened tannic structure, and a refined natural carbonation.
Onirique currently releases three ciders each vintage, highlighting the apples that ripen at different stages of the growing season in Sonoma County. Gravenstein is their early-season cider, Automnale is a blend of mid-season apples, and Hivernale features a blend of late-season apples.
