Onirique Cider's Recolte Hivernale is a stunning cider made from a blend of late season apple varieties such as: Newton Pippin, Rome Beauty, Arkansas Black, mixed with English bitters like Yarlington Mill and Dabinett, along with a touch of various pears foraged locally.
From Onirqieue: Picked, milled, macerated, and pressed in November as the winter frosts set in. We take advantage of the tannins in this blend and the long, cold nights to achieve a keeve, from which under the chapeau we rack a clean, naturally nutrient deficient juice. An extended native fermentation in stainless steel gives rise to a focused complexity, and by this time the stressed cider is able to be bottled with its own residual sugar, pétillant naturel, wherein a secondary fermentation will take place in bottle, or en tirage, to produce its effervescence, while also leaving a delicate viscosity and roundness.
Tasting Notes: Wow, this is really yummy. We could keep it at that and underscore that as our first and second impression of this cider - but we know you want a bit more from us on tasting notes so here ya go. Golden hue with a petulant sparkle. Gentle aromatics of apple skin, orchard floor, honey, and peach candy. It drinks sem-dry with a nice mouthwatering touch (medium acidity) and very light (medium-minus) tannins. Sweetness up front is cut through by a balancing crispness and pleasant acidity. Fresh apple juice spritz, lightly floral, with supporting flavor notes of honey and dewey honeysuckle. Fruity hints of black cherry, candy orange peel, and white peach.
About Onirique Cider: Onirique is the French word for “Dreamlike”. This project is the Onirique desire of the Retornaz Family to share their collective energy, expression, and experience. Working at a prominent organic apple farm and cidery in Normandy, Jeremy Retornaz learned of the rich traditions and French cider making practices associated with the Calvados region, and later introduced the Onirique brand into the U.S. market. Seeing the potential for cider, and discovering the pomological potential of California's Sonoma County upon his return stateside, Onirique was created in an attempt to express this place through the lens of cider. What results from this “Projet d’Onirique” are ciders reminiscent of Normandy, with a uniquely Californian soul.
With respect to the apples, Onirique Cider is made to express their qualities; you will find an intense apple characteristic in their ciders. Prolonged maceration on pulp and skins is done to this effect. When applicable, the Normandy cider tradition of Keeving is utilized. This process often results in residual sweetness, a softened tannic structure, and a refined natural carbonation.
Onirique currently releases three ciders each vintage, highlighting the apples that ripen at different stages of the growing season in Sonoma County. Gravenstein is their early-season cider, Automnale is a blend of mid-season apples, and Hivernale features a blend of late-season apples.
