Domaine Dupont's Pommeau de Normandie is a longtime family favorite and a classic example of a perfectly crafted Pommeau, made with the methods and the apple varieties that have been traditionally used by French cider makers for centuries.
Pommeau is made by blending freshly pressed apple juice (usually 2/3 of the blend) with Calvados (1/3 of the blend). Calvados is Apple Brandy made true to the standards established by the A.O.C. for the Normandie region. Dupont uses French Bittersweet apple varieties in their pommeau blend, predominantly Binet Rouge. The blend of Calvados and fresh juice is then left to age in oak barrels for at least 3 years prior to bottling.
Best served slightly chilled, 1-2 ounces at a time as an aperitif or for dessert. Excellent on it's own, and pairs exceptionally with chocolate, creamy cheeses, or sweeter fruits (Melons).

About Pommeau: French-style apple ‘mistelle,’ a blend of fresh juice (called ‘must’) and brandy. Historically, in western France, fresh apple juice was blended with cider brandy to preserve the flavors throughout the year. This operation, known as ‘mutage,’ was done quietly on the family farm and, for centuries, the method was a closely guarded secret. The result became the local apéritif, called Pommeau - from ‘pomme,’ meaning apple. A fine Pommeau blends strength, sweetness and delicacy.
