Eve's Cidery's Virginia Crab is a single varietal cider made 100% from Virginia Crab apples grown on Eve's farm in the Finger Lakes region of Upstate New York. Naturally fermented with wild yeast in neutral oak barrels. Secondary fermentation in bottle, hand disgorged for a natural sparkle in the Traditional Method (a.k.a. Method Champenoise).
The Virginia Hewes Crab is a famed American cider apple that can be a pain in the orchard, but makes for quite the lovely cider. For Eve's, it's the first apple to bloom in their orchard of more than 50 varieties - making it susceptible to frost damage in the Spring. It's also a vigorous grower with relatively wild growing habits, which can make harvesting these golf ball sized apples a day's worth of work to fill a bin. But it's worth it!
This cider is dry, tart, and tannic with notes of grilled pineapple, rhubarb, and nice wood notes. It pours with a reach and creamy head of bubbles in your glass. A beautiful entanglement of vibrant bubbles, a touch of sweetness, bright acidity, and lingering tannins. A rich and complex cider.
About Eve's Cidery: One of our long-time favorite American cider makers. Eve's is located in the Finger Lakes region of Upstate, New York - one of the premier apple growing and cider making regions in the U.S. Started in 2001 by Autumn Stoscheck, James Cummins, and Ezra Sherman - making Eve's Cidery part of the early wave of cideries helping revive American fine cider. They have thoughtfully developed their own organic cider orchards, intentionally selecting apple varieties to grow based on those that are excellent for cider making and that grow well in their terroir. Eve's makes cider using traditional methods - all native yeast fermentations, bottled either still or naturally sparkling (Méthode Champenoise/Traditional Method).
